Here comes September. Autumn, fall, pumpkin pie, pecan pie, maple leaves, orange, more pumpkin, a month of many birthdays, and not forgetting, Vegan MoFo 2013! In an earlier post I mentioned that my theme would be the “A-Z’s of Southeast Asian Classics.” I even planned a list of dishes for each day of the week. Yet right on the first day of Vegan MoFo I hang my head in shame because that list was far too ambitious; instead I now settle for the more forgiving and flexible (and often overused) theme of the A-Zs. Specifically I will follow the letters of the alphabet to feature common vegan ingredients, but used in uncommon weird, wacky ways. Because weird stuff is my style ;).
Day 1: What do we have in store for letter A? The first thing that comes to mind is Avocado. Smooth and buttery, it is great alternative to dairy butter, not to mention that it comes with a whole load of heart-healthy fats and vitamins. Instead of turning it into guacamole, why not try this Buckwheat Banavocado Bread. Mashed avocados is used in place of butter, but the texture and taste is not compromised. Buckwheat flour is used, but you may substitute with any kind of flour; the recipe is very forgiving!
Okay, so plucking out an old recipe may be cheating, but I promise I have very exciting recipes planned ahead.
